An absolutely delicious recipe: the chocolate cupcake is incredibly moist and contrasts divinely with the vanilla frosting. And with the help of the green Bon Bon Bum Zombie, we give it that perfect spooky touch for Halloween! Make them for your little ones—they’re sure to love them!

Ingredients:

Cupcakes:

  • 100 grams of all-purpose flour
  • 40 grams of unsweetened cocoa powder 3/4 teaspoon of baking powder (3 g) 1/2 teaspoon of baking soda (3 g)
  • 1/4 teaspoon of salt (1 g)
  • 2 eggs at room temperature
  • 115 grams of white sugar
  • 115 grams of brown sugar
  • 90 ml of canola oil
  • 3 teaspoons of vanilla extract (15 ml) 115 ml of buttermilk*

How to make buttermilk:

Mix 115 ml of whole milk with 1/2 tablespoon of vinegar and let it sit for 5-10 minutes, or until the milk curdles slightly. Done!

Frosting:

  • 230 g of unsalted butter
  • 360 g of powdered sugar
  • 3 tablespoons (30 to 45 ml) of heavy cream or whipping cream 1 teaspoon of pure vanilla extract
  • A pinch of salt

Decoration:

  • Red food gel
  • Bon Bon Bum Zombie Edible eyes

Preparation:

Preheat the oven to 350°F/177°C. Prepare a 12-cavity cupcake tin and place a cupcake liner in each cavity.

In a large bowl, mix the flour with the cocoa powder, baking powder, baking soda, and salt. Set this mixture aside. In a separate bowl, mix the eggs with the white sugar, brown sugar, oil, and vanilla.

Pour 1/3 of the wet ingredient mixture into the bowl with the dry ingredients. Then pour in 1/3 of the buttermilk and gently mix everything together. Repeat this step twice, alternating with the

remaining wet ingredient mixture and the buttermilk. Mix just until everything is incorporated— do not overmix.

Pour the batter into the cupcake liners, filling them only halfway.
Bake the cupcakes for 20-30 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Let them cool completely before decorating.

Prepare the Frosting:

In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a hand mixer, beat the butter until smooth.
Sift the powdered sugar, add it to the butter, and mix on low speed at first, then increase to medium speed and continue mixing for 1 to 2 minutes, or until fully incorporated.

Add the heavy cream (start with 2 tablespoons and add more if necessary), vanilla extract, and salt, and continue mixing on medium speed until well combined, stopping to scrape the sides of the bowl as needed.
Use the frosting to decorate the cupcakes.

Decorate the Cupcakes:

Once all the cupcakes have frosting, cut the stick of the Bon Bon Bum Zombie and stick the bon bon into the cupcake (use my video as a reference). Then, decorate the Bon Bon Bum Zombie with an edible eye, using the red food gel to attach the eye. Afterward, you can create “veins” with the red food gel or simply decorate the cupcake with more eyes—whatever you prefer.
